Legend has it that Léon was the name of the Valais winemaker who invented the raclette. On a cold day, he warmed up a piece of cheese
over the open wood fire instead of eating it raw. The typical Valais dish was born, which has since been served far beyond the
borders has caused a sensation. Cheese has been documented in Valais since the 4th century BC. Alpine cheese was famous during Roman times.
Alpine cheese was famous during Roman times, and between the 14th and 19th centuries it was often used as a means of payment,
or used as an export product. The melting of cheese was already known in the Valais in 1574.
The term raclette comes from the native French dialect (racler = to scrape) and from 1874 it was officially used to describe the cheese.
